Why do laddus keep at all?

Long before refrigerators, Maharashtrian homes made faral by the dabba-⁠load and trusted it to last the season. That trust rested on three old allies. Thorough roasting drives the moisture out of flours, and dryness is what keeps food safe. Desi ghee coats every grain. Jaggery and sugar are themselves keepers. A laddu made properly is its own storage system; our job is only not to ruin it.

The habits that make the difference

  • An airtight steel dabba, the same kind your house always used, beats any fancy jar
  • Dry hands and a dry spoon, every single time. Moisture is the only real enemy a laddu has
  • Keep the dabba away from the stove's heat and direct sunlight, or the ghee softens and the laddus lose their shape
  • Never store laddus and chivda in one tin. The masala's aroma travels, and the laddus will taste of it within a day
  • The rawa naral laddu is the one exception to the no-⁠fridge rule: in warm weather keep it cool, and finish it within the week

How do you know a laddu is past its best? Trust your nose, the way the grandmothers did. Fresh ghee smells warm and sweet; stale ghee turns flat and khavat. How long does besan laddu stay good?

About 21 days in an airtight dabba at room temperature, away from moisture and heat. That is our own kitchen's number for laddus made with desi ghee and no preservatives.

How can I tell if a laddu has gone stale?

Trust your nose. Fresh ghee smells warm and sweet; stale ghee smells flat, the smell Marathi calls khavat. If the aroma has dulled and the laddu crumbles dry, its time is over.
