Good for you, and better to taste

Nachani is the grain every Maharashtrian grandmother swears by. Dark, humble, grown on dry land without any fuss, and quietly stronger than everything else in the kitchen. When she wanted the children strong, this is what she reached for.

The problem was always the taste, so homes solved it the home way: jaggery, ghee and patience. Roasted ragi flour turns nutty and deep, jaggery melts into it, and suddenly the healthy thing is the first thing to disappear from the dabba.

No refined sugar ever touches this laddu. It is the one we hand to children and grandparents with the same confidence.

Three honest steps, nothing added, nothing hidden.

How it comes together

Whole ragi grains, hand-broken brown jaggery and a small katori of ghee in brass bowls on linen
01

Ragi, jaggery, ghee

Whole ragi is milled fresh, dark jaggery is broken by hand, and the ghee is the same one that goes into every laddu of ours. Three things you could find in any farm kitchen a hundred years ago.

The deep roast

Ragi asks for more patience than besan. It roasts low and slow until the flour smells of warm earth and toasted grain, and its colour turns a shade deeper. This is where the laddu earns its taste.

Jaggery does the rest

Melted jaggery is folded in off the flame so it stays soft, and the laddus are rolled while the mixture is warm. Dark, glossy, and heavier in the hand than they look.
