The laddu that never lasts long
Rawa laddu is the quiet one. It doesn't announce itself with a roasting smell that fills the lane; it simply appears on a plate after lunch, pale gold, a raisin in each bite, and is gone by evening. In most homes it is the first laddu children learn to love.
The trick is the coconut. Fresh, never dried, grated the same morning and folded into roasted rawa while both are still warm. That is what keeps the laddu soft, and that is why it will not keep for a month. It is not supposed to.
We make it in small batches, eat one or two ourselves in the name of quality checking, and send the rest out the same week.
Three gentle steps, nothing hurried.
How it comes together

Fresh coconut, same morning
A whole coconut is broken and grated on the morning of the batch. Rawa is measured out beside it, with raisins and a little cardamom. The kitchen smells sweet before the stove is even lit.

The gentle roast
Rawa is roasted in ghee only until it turns fragrant, never brown. The coconut goes in next and the two get to know each other slowly, on a low flame, with milk and sugar deciding the softness.

Rolled soft, finished with a raisin
The mixture is rolled while barely warm, so the laddus stay tender. Each one gets its raisin, and the batch is done before the softness can escape.
