The slow work of moong
Most moong laddus begin with flour from a packet. Ours begins the night before, with whole moong dal soaking in water. In the morning it is ground fresh into a wet paste, and that is where the real work starts.
Wet paste does not roast like flour. It clings to the kadhai, asks for more ghee, and takes its own time on a low flame. You keep stirring until it slowly turns deep gold and the raw dal smell gives way to something warm and sweet. There is no way to hurry it, which is exactly why it tastes the way it does.
Jaggery goes in at the end, then cardamom, and the laddus are rolled warm. Because nothing in it was ever dried into a powder, it eats softer and fresher than flour laddus, and we make it in small batches for the same reason.

How it comes together

The soak and the grind
Whole moong dal soaks overnight and is ground fresh in the morning. No stored flour, no packets, just dal and patience.

The long roast
The wet paste meets desi ghee on a low flame and the stirring does not stop. This is the step that takes the time, and the step that makes the laddu.

Jaggery in, rolled warm
Jaggery melts into the roasted moong, cardamom follows, and the laddus are rolled by hand while the mixture is still warm and soft.
