A laddu that smells like home
Every Maharashtrian home has a besan laddu memory. The kadhai comes out on a quiet afternoon, besan meets desi ghee, and within minutes the whole house knows what is happening. Neighbours know. The children pretend to study and wait.
Ours is that same laddu, made the same way. No essence, no shortcuts, no improved recipe. The besan is roasted slowly until it turns the colour of late afternoon sun, sweetened just enough, and rolled while the mixture is still warm in the palm.
That is the whole secret. Patience, good ghee, and someone who cares whose plate it lands on.

How it comes together

The besan and the ghee
Coarse besan, desi ghee and a little cardamom. Nothing else enters the kadhai, so nothing can hide. Good raw material is half the laddu.

The slow roast
The flame stays low and the spatula keeps moving. You smell it before you see it: nutty, warm, a little like the house during Diwali. Stopping too early is the only way to ruin it, so we don't.

Rolled while warm
The mixture rests just long enough to handle, then each laddu is rolled by hand, one at a time. Slightly uneven, the way hand-rolled things are, and exactly as they have been for the last hundred years.
