JaggeryUkdiche modak ask for patience. Rice flour is cooked into a soft ukad, kneaded while it is still hot, and pressed into thin cups by hand. Each cup is filled with fresh coconut and jaggery, gathered into pleats at the top, and steamed until the shell turns soft and glossy.
And this is where Gharguti Godwa itself began. The first orders this kitchen ever took were for modak, and the orders that followed slowly grew into everything else on this menu. So the modak here is not one more item on the list; it is the reason the list exists.

Three patient steps, none of them hurried.

Rice flour goes into boiling water and is worked into a soft, hot ukad. It is kneaded while it can still burn the fingers, because that is what keeps the shell smooth and pliable.

Fresh coconut, grated the same morning, cooks down gently with jaggery until the two agree with each other. The filling stays moist and just sweet enough, never heavy.

Each cup of dough is filled, then gathered into pleats with the fingertips and closed at a peak. A short rest in the steamer, and the shells turn soft and glossy, ready for the ghee.
