Multigrain Chakli

A proper bhajani chakli announces itself. The spiral snaps, the roasted bhajani crumbles just right, and someone across the room asks for the dabba. Ours are pressed from roasted bhajani flour and fried in small batches, so every spiral is crisp all the way through.

Chakli is the savoury anchor of the faral plate, but it never waits for a festival. With evening chai, with a long chat, or straight from the tin standing in the kitchen, it disappears the same way every time.
