Puran Poli

Puran poli takes time, and it should. Chana dal and jaggery are cooked down into a soft puran, wrapped in a thin dough and roasted till the poli blisters. Some houses make it for Holi, some for Gudhi Padwa; ours makes it whenever someone needs a celebration.

Eat it warm, torn by hand, with a spoon of desi ghee on top. Sold per piece, in batches of ten, because one is never enough for a house full of people.
